Ingredients:
- 1 cup Puck’s Overtime Whiskey Apricot BBQ sauce
- 1 cup orange marmalade
- 1 tablespoon soy sauce
- 1 - 24oz bag of frozen popcorn chicken
- 2 cups Minute white rice
Steps:
- Bake frozen popcorn chicken by following the directions on the back of the package.
- Prepare the white rice by follows the directions on the back of the package. Our recipe calls for 2 cups rice mixed with 2 cups water and microwave for 8 minutes.
- In a saucepan, add 1 cup of Puck’s Overtime Whiskey Apricot BBQ sauce, 1 cup orange marmalade and 1 tablespoon soy sauce. Bring this to a simmer and while stirring often.
- Once the popcorn chicken is complete, you will add it to the sauce you made in step 3. Mix it gently while coating the chicken with the sauce.
- Add rice on plate and add chicken and sauce mixture on top.
- Enjoy!
